Ingredients
- Caracoles a la Llauna
1kg snails
salt and pepper
olive oil
brandy
- Alioli
an egg yolk
a clove of garlic
lemon juice
salt
150ml olive oil
Directions
- Caracoles a la Llauna
- Lay the snails out on a tray, orifice upwards, and cover very generously with salt and olive oil. Season with ground black pepper.
- Cook snails over hot embers for around 15-20 minutes, continuing to season with salt and pepper and adding more oil throughout.
- Flambé the snails with brandy and cook for a final minute or two. Serve with alioli for dipping.
- Alioli
- Finely mince the garlic and add into a bowl with the egg yolk, a squeeze of lemon juice and a pinch of salt.
- Whisk in the olive oil very slowly at first, adding in a little at time allowing the mixture to emulsify properly. Season to taste.
