Cuttlefish with Garlic | SEPIA AL AJILLO

500 g cleaned cuttlefish
plenty of olive oil
4 cloves of garlic
parsley
half a glass of white wine
salt and pepper
Directions
- Cut the cuttlefish into large dice.
- Fry in a little oil until all the water has been released. Pour off the water.
- Clean the pan, dry the pieces and fry again in a very hot pan until golden.
- Add chopped parsley and garlic and toss a moment.
- Pour over the wine and reduce until almost dry. Check the seasoning and serve.
