Ingredients
- French Onion Soup
2 medium onions
1 clove of garlic
1 ½ tablespoons of butter
a dash of vegetable oil
salt and pepper to taste
½ tablespoon flour
half a glass of white wine
1 litre beef stock
100g Gruyère or Emmental cheese
4 thin slices of baguette
Directions
- French Onion Soup
- Slice the onions into thin, even strips. Melt the butter in a heavy bottomed pan, adding the sliced onions and a pinch of salt. Stir consistently over moderate heat until lightly golden, around 20-30 minutes.
- Finely chop the garlic, stirring it into the onions a few minutes before they’re done. Then add the flour, continuing to stir until it lightly colors.
- Add the wine, reduce by half while stirring, then splash in some stock to incorporate the flour sans lumps. Add in remaining stock, season with black pepper, and simmer for 20 minutes.
- Toast the baguette slices in the oven. Grate the cheese. Taste the soup for seasoning, adjust with salt and pepper if needed.
- Fill two oven-proof bowls with the soup, top each with two slices of toasted baguette and grated cheese, ensuring the cheese covers the surface.
- Broil or grill until the cheese is melted and browned, letting it take full heat from above.
