Ingredients
- Mallorcan Fish Soup
500 g small rock fish
500 g larger fish specimens (optional)
3 tomatoes
2 onions
A few cloves of garlic
Chopped parsley
Thinly sliced country style bread
Olive oil
Salt and pepper
Saffron/yellow food coloring
A small bunch of spring onions

Directions
- Mallorcan Fish Soup
- Dice the onion and most of the tomatoes, leaving 2 for later. In a large pan with a generous pour of olive oil, gently sweat the onion adding a few cloves of crushed garlic. Once softened, add in the tomato and cook steadily, seasoning as needed.
- Clean the rock fish and then add the smaller ones into the pan, stirring to break them up a little, and cover with water. Cook gently for around 20 minutes.
- Peel and chop the remaining tomatoes and cut up the spring onions. In a separate pot, heat up some olive oil and gently fry the spring onions, adding the tomatoes when soft and cooking for a few more minutes.
- Strain the fish soup into the vegetable mixture, then add the chopped parsley and saffron. Simmer gently for a further 20 minutes.
- Season the larger fish with salt and pepper, coat them with flour and fry in olive oil.
- Lay the bread slices in bowls and ladle the soup on top. Serve the soup with the fried fish separately on the side.
