This classic dish is a perfect blend of flavors, featuring savoy cabbage, lardons, and root vegetables, simmered in savory chicken stock and served with cheesy, toasted country-style bread. It’s a simple yet delightful meal that is easy to make and perfect for chilly evenings.
Ingredients
- Cabbage soup
1 curly cabbage (savoy)
50g lardons
40g duck fat/lard/butter
1 carrot
1 onion
1 turnip (optional)
2 potatoes
2 cloves of garlic
chicken stock
country style bread
cheese for grating (gruyère, emmental, etc.)
salt and pepper to taste
Directions
- Cabbage soup
- Dice the onion, carrot, and lardons. Add them into a large pot with some duck fat and gently cook until softened, seasoning with salt and pepper. Then add in the garlic (roughly chopped) and gently sweat.
- Chop the cabbage into quarters, remove the core, and then slice into smaller strips. Add the cabbage to the pot and cover with boiling chicken stock. Allow to simmer for around 30-40 minutes.
- Peel and roughly dice the turnip and potatoes. Add them into the pot for a final 30 minutes of gentle simmering.
- Grate the cheese and slice the bread. Top the bread with the cheese and lightly brown for a few minutes in the oven or under the grill. Serve the soup with the cheesy bread on the side.
