Ingredients
- Beans with Chorizo Sausage
200g dry white beans
100g chorizo
50g salted pork belly/bacon
1 ham bone (optional)
Olive oil
100ml tomato purée or 2 large tomatoes
2 smallish onions
4 cloves of garlic
1 carrot
1 leek
1 strip of red pepper
1 stick of celery
1 bay leaf
1 teaspoon pimentón red pepper powder
Salt to taste
Directions
- Beans with Chorizo Sausage
- In a large pot, add the beans, ham bone (if using), one onion, red pepper, leek, bay leaves, and a couple of cloves of garlic. Cover with water and allow to simmer for roughly 2 hours, checking periodically after 1 hour.
- Chop up the other onion and remaining garlic. Add the onion to a pan with olive oil, seasoning with salt, and gently sweat for a few minutes before adding the garlic.
- After a few minutes, add the tomatoes, grated into a pulp, and reduce down until thick and jammy.
- Add in the pimentón pepper powder and after a few minutes add the pork belly/bacon and chorizo, sliced into bitesize pieces. Continue to cook and stir for a few minutes before setting the pan aside.
- Once the beans are done, remove the vegetables from the pot with a little bit of the stock and purée with a hand blender to create a thickener.
- Add the beans and some of the vegetable purée to the pan and gently heat for around 20 minutes, checking for seasoning as you go.
