minutesIndulge in the essence of Spanish cuisine with this hearty Pisto Manchego recipe, a vegetable stew brimming with vibrant flavors and wholesome ingredients, perfect for a nourishing main course.
Ingredients
- Pisto Manchego
50ml olive oil
1/2 large onion
1 large green pepper
1/2 large red pepper
3 cloves garlic
1 courgette
5 tomatoes
pinch of Spanish pimentón pepper powder/paprika salt
2 eggs
Directions
- Pisto Manchego
- Chop all vegetables into even sized small dice and roughly chop the garlic. In a generous pour of olive oil soften the onion for a few minutes then add in the peppers. Cook down while stirring well for several minutes then add the garlic.
- Once the vegetable mixture is soft and starting to colour a little add in the diced courgette and leave to cook for a further 10 minutes.
- Cut the tomatoes in half and grate into a pulp removing the skins. Add the pulp into the vegetable mixture and cook steadily until quite dry and not at all soupy, seasoning with pimentón pepper powder and salt.
- Fry the eggs in some olive oil. Serve the pisto manchego plated with an egg on top.
