Ingredients
- Truite Amandine
2 trout
3 tablespoons of butter
1 tablespoon of oil
4 tablespoons slithered almonds
salt and pepper to taste
flour for dusting
1 lemon
chopped parsley for garnish
Directions
- Truite Amandine
- Cut off any fins on the trout and season generously on both sides with salt and pepper, then lightly coat them with some flour.
- Over medium to high heat, melt a tablespoon of butter with the oil. Cook the trout for 4-5 minutes each side. To test if they are done, insert a knife into the back alongside the dorsal bones; the flesh should pull away from the bones with very light resistance.
- Remove the trout and place in a warm spot. Wipe the pan clean and add the rest of the butter, then lightly toast the almonds. When golden, add a generous squeeze of lemon juice and mix in the chopped parsley.
- Serve the trout whole plated with the almonds sprinkled on top and a few lemon slices to the side.
