Ingredients
- Rioja Style Potatoes (Patatas a la Riojana)
4 boiling potatoes
1 green pepper
1 onion
1 chorizo sausage
2 cloves garlic
1 tsp pimentón pepper powder
2 small dried cayenne peppers
1 tsp inner pulp of dried and soaked pimentos cheros peppers
1 bay leaf
Salt to taste
Olive oil for frying
Directions
- Rioja Style Potatoes (Patatas a la Riojana)
- Finely dice the green pepper and onion, then finely chop the garlic. Gently fry the onion and pepper in olive oil for a few minutes, then add the garlic.
- Chop the chorizo into thick slices. Stir the vegetables around for a few minutes until starting to take on color, then add the chorizo and bay leaf and continue frying steadily.
- Peel the potatoes and break them into smaller pieces. When the chorizo has started to color, add the potatoes and give them a good stir.
- Add the cayenne and pepper pulp, then pour over just enough water to barely cover the potatoes.
- Add the pimentón pepper powder, stir, and let cook for around 40 minutes until the sauce is reduced and slightly thickened from the starch. Season with salt to taste.
