Ingredients
- Spanish Garlic Soup
500ml chicken stock
6 cloves of garlic
olive oil
50g slice of Spanish serrano/ibérico ham
100g day-old white bread
1 tsp pimentón pepper powder/paprika
salt
2 eggs
Directions
- Spanish Garlic Soup
- Crush and roughly chop the garlic and dice the ham into small pieces. Gently fry in a generous amount of olive oil until starting to turn golden.
- Add the ham, season with salt, and stir for a minute or two.
- Add in the slices of bread and stir to coat them in the flavourful oil. Sprinkle with the pimentón pepper powder and stir.
- Pour in enough stock to cover and let gently simmer for 20 minutes.
- Crack the eggs straight into the soup and let cook whole until firm. Season to taste.
