Ingredients
- Caldeirada de Peixe (Fish Stew)
1kg white fish, cut into slices of about 50g
1 large onion
½ red pepper
½ green pepper
2 medium tomatoes
4 cloves of garlic
2 or 3 bay leaves
50ml olive oil
100ml dry white wine
1 small bunch of parsley
1 small pinch of Portuguese hot pepper powder ‘Piripiri’ (optional)
salt to taste
Directions
- Caldeirada de Peixe (Fish Stew)
- Slice the onion and peppers into strips and the tomatoes, potatoes, and garlic into discs or halved discs.
- In a deep pot, layer the sliced ingredients, lightly salting each layer as you go: start with the onion, followed by the red and green peppers, tomatoes, bay leaves, garlic, and fish. Pour the wine and olive oil over the top.
- Optionally sprinkle the piripiri on top, chop up the parsley, and sprinkle over the top. Cover with a lid and cook at a gentle simmer for around 20 minutes.
