This hearty recipe combines broad beans, pork belly, sausage and a mix of herbs, cooked to perfection with a hint of anis liqueur for an added depth of flavor. Ingredients
- Faves a la Catalana
500g broad beans
2 slices pork belly/bacon
1 botifarra negre or normal sausage
1 green onion
3 young garlic or 2 normal garlic cloves
olive oil
Herbs: mint, bay leaves
anis liqueur / vi ranci / sherry
salt and pepper to taste
Directions
- Faves a la Catalana
- Roughly chop the young garlic, dice the green onion and slice the pork belly into small bite-size chunks. Add all this into a pan with a generous pour of olive oil and cook until softened.
- Add in the broad beans and sauté for a couple of minutes, seasoning with salt and ground pepper.
- Add in the chosen alcohol (anis liqueur, vi ranci, or sherry), herbs, sausage, and a drop of water. Cover with a lid and cook for 15 minutes or until the beans are fully cooked. Check a couple of times throughout to make sure the liquid does not dry up, adding more water if needed.
- Season with salt and pepper as needed and then remove and slice the sausage into smaller pieces before serving.
