Ingredients
700 g potatoes
olive oil
a chicken drumstick
a pork rib
half an onion
a carrot
a tomato
a quarter of a red or green pepper
2 cloves of garlic
a bay leaf and
a teaspoon of pimentón pepper powder / sweet paprika
a pinch of saffron
half a glass of white wine
chicken stock or water
50 g peas
salt and pepper
Directions
- Chop the pork ribs and chicken drumstick into smallish chunks. Season and gently fry in olive oil. Avoid excessive colouration. Remove
- Finely chop the onion, slice the onions and dice the pepper. Fry this in the same oil as the meats with a pinch of salt.
- When soft add the chopped garlic. A few minutes later, the grated tomato pulp. Reduce gently for a few more minutes.
- Now add the pimentón, the saffron and the bay leaf. Stir a minute making sure the pimentón does not burn.
- Pour in the wine and reduce by half.
- Break the potato into even chunks (see video). Add to the pot along with the reserved meats. Stir a minute, then add water or stock to barely cover.
- Cook until the potatoes a done and just starting to fall apart. Add the peas after 10 minutes.
